Sugar Beet

Utah designated the sugar beet as the state historic vegetable in 2002, supported by the students of Realms of Inquiry School of Salt Lake City. The production of sugar from sugar beets contributed substantially to Utah's economy for almost one hundred years. Utah also recognizes another official vegetable symbol (see all state food symbols).
